Somebody made a digital synth based on an Arduino Due.  Its an interesting project because of the attention to detail: with just a few more design iterations it seems like it could be ready for production.

If I were to build my own version, I would want to include a waveform visualizer, and it would be nice to have the ability to switch between time and frequency domains.  I think that would make constructing complex signals a lot easier.
